You may have noticed that I didn’t start 2013 off with any resolutions, as I have been known to do in the past. You may have also noticed that I have not updated the big, ambitious list of goals to complete in my 30th year for some time, either.
Yeah…………about that. I’m kind of not in the mood to check things off lately. I’m in the mood to play with my toddler (WHO IS ALMOST TWO YEARS OLD DEAR GOODNESS HOW DID THIS HAPPEN?), teach him new words, and race him up hills. I’m in the mood to occasionally see friends in person, maybe watch another KU game from INSIDE Allen Fieldhouse, and play a few games of cards with family. I’m in the mood to take LilRunr to some more track meets and run without training for anything specific.
What I am NOT in the mood for is checklists. This is why, in lieu of the long list of resolutions or the even longer list of 30 Goals, I’m trying instead to live my life in a way that reflects one simple idea:
Waste not, want not.
I’m trying not to be wasteful. After taking a look at our expenses for last year, the Husband and I have realized that it might be time for us to take a serious look at crafting a budget. We want to be good stewards of the blessings and resources we’ve received. Also, kids can be expensive, y’all. I’d also like to make the best use of my time — I can be a bit of a homebody, and there are lots of times when Scott suggests going out for a family adventure that I turn down out of laziness. Time is flying by, and I don’t want to look back and regret the missed opportunities.
The easiest place for me to apply the “waste not” strategy is with FOOD. Every so often, the news will run a story about how much food we waste in America. Um…guilty! With the way grocery prices keep going up, using the food we buy is a win/win — don’t waste food, don’t waste money. Awesome!
This is why, when my produce delivery arrived last Monday and I was leaving for Florida early on Wednesday, I ate an entire bell pepper with my Tuesday dinner. Scott thought it was one of the grossest things he’s ever seen (bet he’s changed his mind now that he gets to live with my zombified, looks like it’s about to rot off my body arm), but I knew neither of the boys would eat that bell pepper, and I didn’t want it to go bad. WASTE NOT!
This is also why, early this week, when I realized that the bananas I had lovingly bought for my fellas before I left for Florida had gone uneaten, that I needed to find something to do with them. Immediately. And of course, brown bananas call for nothing so clearly as banana bread.
I wanted to make my favorite peanut butter/chocolate banana bread, but my friend Lindsey’s recipe calls for items that are not automatically found in my kitchen, such as Greek yogurt and coconut milk creamer. I wanted to use those bananas, and I wanted peanut butter and chocolate to go with them, but I didn’t want to have to go to the store.

The Internet is full of food blogs, and while I love perusing them and drooling over the beautiful pictures, when it comes to actually finding a good, usable, and simple recipe…well, the Internet can be a bit of let-down.
Do I want to spend 4 hours and use 5 bowls in order to get one loaf of banana bread? I do not.
Do I think that I should have to keep 8 different types of flour on hand, or stock up on something called “pink Himalayan sea salt” in order to make a loaf of banana bread? I do not.
Do I want to make “banana” bread using only ONE banana, when I have three sitting on the counter, begging not to be wasted? I do not!
Just when I was about to give up and go to the store to get Greek yogurt to make Lindsey’s bread, I found it. THIS. Chocolate/Peanut Butter Marbled Banana Bread. I’m not going to list the recipe here because I didn’t make any changes, and all credit should go to the original blogger, but…yum. This bread tastes great and looks oh-so-pretty.
